The first time I ate a green leafy vegetable, I felt it in my gut.
I thought, I want more of this, I really want more.

So, I went to the garden to get some, and the kale was like a dream.
I’d never seen it before.
I was amazed.
I could tell by the colour and taste that it was going to be a good addition to my diet.
So, I started with a couple of tablespoons of the whole stuff.
It tasted amazing, it tasted like a superfood.
It tasted like the kind of greens you’d put on your salads or something.
And then I started making more, and I started using it in recipes.
I used to get a bit obsessed with kale.
Then, one day, I was making a batch of kale chips and I just couldn’t stop eating it.
And then, I had this idea to try making kale chips at home, and that’s how I did it for the next two years.
In those two years, I’ve got a kale plant at home that I grow on a regular basis, and so, I’m going to make kale chips every week.
But, kale chips have been a huge part of my life for many years.
They’re part of the reason why I got my start in the restaurant industry.
I grew up with kale, and it’s still my favourite.
